I want to make a 5 gallon batch of IPA. I tend to like American IPAs over the British ones and i dont want to make this over the top, something around 6-6.5% ABV would be good.

I mash up to about 8 lbs of grain and can do full boils.

Here is what we have to work with:

6 lbs Light DME
7 lbs Light LME
2.5 lbs Munich Malt
1 lb Aromatic Malt
0.50 lb. Crystal 15L
0.25 lb. Crystal 40L
0.33 lb. Crystal 60L
0.50 lb. Crystal 75L
0.75 lb. Crystal 120L
0.67 lb. Pale Malt

Pellet Hops

8.5 oz cascade (7.1%)
3.5 oz centenntial (9.4%)
4 oz columbus (15.2%)
12 oz Kent Goldings (5.7%)
8 oz Mt Hood (3.8%)
2 oz Saaz (3.6%)
2 oz Tettnang (3.9%)
2 oz UK WGV (4.5%)
4 oz willamette (3.9%)

Yeasts i have are Safale Dry Yeasts US-05 and S-04.

Suggest some recipes using what i have in stock.

TIA guys!! my last IPA was not good at all, although i think it might have been my first and only infection (brett).
 
-Need the AA% on the hops (and pellet or leaf).
-Also, do you mini-mash?
-And what kind of yeast?

Here is a shot with some assumptions:
Mash your Aromatic Malt at 152F for 45 minutes
Use all of your DME and all of your Crystal 15, 40, and 60L
Boil for 90 minutes with
.5 oz Columbus (16 AA%) at 90 min
.5 oz Cascade (6 AA%) and .5 oz Centennial (10.5 AA%) at 20 min
.5 oz Cascade (6 AA%) and .5 oz Centennial (10.5 AA%) at 10 min
.5 oz Cascade (6 AA%) and .5 oz Centennial (10.5 AA%) at 5 min
Dry hop with Cascade and Centennial in secondary
WLP001 yeast

This should get you about 6.5% abv and around 60 IBUs with fairly smooth bitterness and full of citrusy American hop flavor and aroma. Your mileage may vary based on the 3 bullets at the top.
 
Assuming a 3 gallon 60 minute boil and average AA's for those hop varieties... use US-05, WLP001, 1056, or in a pinch Nottinghams. This will make a nice american pale ale. Too bad you didn't have any Simcoe.. then the party would DEFINITELY get started ;)

Those IBUs sound high for a concentrated boil. I would think it would lose at least 20% utilization. Also, I am confused by the 45 and 30 minute additions. Moving the 45 to 60 and the 30 down to 20 will give the same bitterness, but more flavor. Flavor is lost fairly rapidly after 20 minutes of boiling, but full bittering doesn't take effect until 60 to 90 minutes.
45 minute hops = virtually no flavor and 10% drop in bitterness relative to 60 minute boil

Yeh, that calculator isn't gods word, but it'll get you close. We don't even know what the AA or the hops are. You can't live life based on some chart some dude made in MS paint. Add 10 ounces of Warrior at 90 minutes and tell me there will be no flavor. There will be so much flavor you will not even be able to drink the beer.

Here is my attempt based on recommendations above and trying to use some stuff up. Please provide comments/criticisms

4 lbs Light Dry Malt Extract
3 lbs Light/Pale Malt Extract Syrup (Late addition - 15 min left in boil)
1 lbs Aromatic
1/2 lbs Crystal 10L
1/4 lbs Crystal 40L
1/3 lbs Crystal 60L

.5 oz Columbus (15.1 AA%) at 90 min
.5 oz Cascade (7.1 AA%) and .5 oz Centennial (9.4 AA%) at 20 min
.5 oz Cascade (7.1 AA%) and .5 oz Centennial (9.4 AA%) at 10 min
.5 oz Cascade (7.1 AA%) and .5 oz Centennial (9.4 AA%) at 5 min
Dry hop with 1 oz Cascade (7.1 AA%) and 1 oz Centennial (9.4%)

1 tablet Whirlfloc at 10 min

Pitch US-05

OG 1.069
6.9% ABV
67.7 IBU

Mash all grains at 154F for 45 min. Batch Sparge. Collect 6.5 Gallons wort.

Bring to Boil, Flame off. Stir in DME. Bring to Boil, wait for Hot Break. Start Boil Time.
 
I'd think twice about dry hopping Centennial. Take a whiff of that stuff and honestly ask yourself if you want to smell that every time you drink the beer ;)
 
should i go 2 oz cascade then for the dry hop?

I have never used centennial before, and it is still vacuum sealed :)

Actually, it would probably be so bitter I wouldn't be able to drink it.

I think the curves from that site (which I have seen elsewhere and the experiments to support it) are highly variable with a large contributor being vigor of the boil. The hop flavor and aroma come from hop essential oils, not the alpha acids. The essential oils are highly volatile and boil away very easily. For a low gravity AG beer or an extract beer that you don't have to boil down a ton, you can afford to have a slow rolling boil and have some essential oils survive up to 60 minutes (which may be your experience). On the other hand, I make a lot of high gravity IPAs that need to boil down a lot. I lose about 17% to evaporation per hour, so my boil is quite vigorous. In that case, the essential oils boil away quite a bit more quickly and would be completely gone in 30 to 40 minutes (more like the chart).
 
well, you might have already gone with a recipe, but i feel like its a fun thread idea, posting ingredients and getting multiple recipes out of it from other posters.
so here's what i would do, as a 1st year extract brewer.
since ive never done a minimash id probably use this for steeping.
1 lb Aromatic Malt
0.50 lb. Crystal 15L
0.25 lb. Crystal 40L
7lbs of the light extract syrup, maybe make it a slightly bigger beer and add one lb of the DME.
Columbus for 60 min
and then 15, 10, 5 mins with the centennial.
1 oz of cascade at flame out and 1 oz of cascade for dryhopping.
