I want to make a biggish dubbel soon, but want to grow up and wash yeast for future batches. What'd be a good recipe to pitch without a starter (smaller batch size is good) that will grow the yeast?

I have a low gravity saison already, and a dubbel that should be ready soonish, so I was thinking Belgian session IPA (no dry hops). 1.040, 35-40 IBUs with some late hops, pils/pale, vienna, munich, maybe a little crystal to give some backbone and some late hops. Maybe American, maybe more continental.

Any thoughts or alternate recipe ideas?
