Looking for a recipe involving long conditioning

The title sums it up. I've just been given 40 extra swing top bottles and would like to brew a batch that I can let sit for years, enjoying a few bottles on special occasions. I'm looking for an Extract recipe that would involve bottle conditioning for 1+ years. I'd like to stay away from Barley Wines.

I have a Thomas Hardy Ale clone and a Strong Scottish Ale recipe written down and will use one of these as a backup plan. I'm curious as to what others have done themselves and enjoyed.
