I'm looking to build a small rig specific to sour brewing.

I have a 7 gallon kettle that I will be mashing in. I plan to infusion mash, and then want to be able to hold the mash temp at 90-120F for 24hrs to promote lactobacillus growth.

Anyone have a good electric burner/hot plate burner recommendation for this?

I am going to rig it up to a temp controller and pump/RIMS that will recirculate during heating.

Hoping a smaller 1-1.5 kw hot plate will do the trick on about a 3gal9# mash volume.

I have larger burners and kettles for the boil portion.
