I have about 7lbs of LME as part of a kit for my next batch (which I'll start as soon as the first batch is done fermenting). How should LME be stored? Should it be refrigerated?

No need to fridge. It needs to be used in a month or so. The fresher, the better. You should be fine if you brew after your primary is empty. Hmmmmm how about pitching onto your yeast cake? Maybe the next step for you! Saves half the price of the recipe if you used liquid yeast. Good luck!

I would put bit of vodka over the top of it if you don't plan on using it for a while. You mention using it soon, so I would just seal it up well and use it as soon as possible. If you planned on longer term storage, go with the vodka on top, seal it, and put it in the fridge.
