I do all grain and mini's and keep all my grains in the frig but what about LME? Does it hurt anything? I bought enough for a few months supply and would hate to ruin anything. They are sealed in plastic containers and the frig I keep at about 40f (I love a really cold beer)

I've read that containers of LME can get surface mold. One suggestion, which I've used a couple of times, is to float a layer of vodka on top of the LME inside the container and then keep it in the fridge.
 
I keep my LME in my fridge. I have a container of wheat LME in my man fridge (that I use for wheat starters) that is going on 2 years old and no mold.
 
When I started with extracts I did the same thing as cricky. Let the LME settle after use and just put a fine layer of vodka on top. I didn't worry about draining it when I brewed, figured that small amount of vodka would boil off in 60 minutes.
