So, I'm currently moving from an apartment to a house and living in both for the time being. Whilst away for the weekend my ******* roommate decides to turn of the A/C in our apartment. We normally keep it arctic tundra cold and he knows the reason why; BEER! I went to my apartment today to find that it was somewhere around 90 effin degrees. My question is do you think that the brews will be ok? I have a robust porter in primary, a nutt brown in secondary, a stout in bottles, and a pale ale in bottles. Please tell me they are OK. By the way the porter was only a couple of days into primary.:(

Anything that has finished initial fermentation will be fine. Most of the esters and fusels generated by high temperatures are created during the most active part of fermentation. So, your porter may be at risk unless it is no longer actively fermenting. Everything else should be fine.

That's pretty hot. If fermentation was mostly done, no big deal.

I'd leave it in primary for at least 4 weeks or so to give the yeast every opportunity to clean up anything they can.

The bottled beer is fine. One day at 90F isn't a killer. Since the porter was several days into its ferment, it is probably A. okay B. done fermenting. If it tastes alright, it is.

These guys are crazy! No beer can stand that kind of temperature without creating toxic compounds. I advise you to send it all to me and I will dispose of it properly.

+100 yeast are really good about cleaning up after themselves if given a chance.

Groan.....:D

Although the "send the beer to me for proper disposal." joke is what you are trying to say, it's not a good idea to say it produces "toxic compounds," there are enough nervous new brewers, who will actually believe that.

There are enough folks in this world, and on here, who don't understand the basic mechanics of brewing, and think that 1) you can go blind, 2)you can get a yeast infection 3) pathogens can form in our beer....

All of which is patently false (which you know) :D And all of which most of us have had to diffuse at one time or another....

so it's not a good idea to say that, even in jest...

Besides, you poseur...you are not an authorized beer disposal agency...I am, and I faked...er...I have the proper credentials to prove it.

So neener neener neener.....:D
