So I want to brew, but the closest brew store is over an hour away. I've got:

2 pounds light DME
3 pounds dark DME
3.5 pounds "john bull" amber LME
3.3 pounds Muntons extra light LME

7 pounds Maris Otter
6 oz Munich malt 10L
3 oz chocolate malt 350L
1 pound roasted non-malted barley 675L
1 pound rye
5 pounds flaked wheat
8 oz flaked rice

1 oz argentine cascade pellet
1 oz centennial pellet
1 oz cluster pellet
1 oz fuggle pellet
1 oz glacier leaf
1 oz kent goldings UK leaf
2.5 oz kent goldings USA pellet
2 oz liberty pellet
1 oz mt hood pellet
4 oz nugget pellet
1 oz perle leaf
2 oz perle pellet
1 oz saaz pellet
2 oz spalt pellet
1 oz sterling pellet
1 oz styrian goldings pellet
1 oz tettnang pellet
1 oz target pellet

Nottingham and s-04 yeast

The original idea was to make a cerveza, then a bitters, but I can't find recipes that I have all the ingredients for in either case. So lets make one together... Ideas?

Could do a stout:

7 pounds Maris Otter
6 oz Munich malt 10L
3 oz chocolate malt 350L
1 pound roasted non-malted barley 675L

1 oz fuggle pellet

S-04 yeast

Bump it with some DME if you need to.

I recently did a stout and am feeling something different. I also can't do all grain brewing.

Why do you have MO then? Can you do PM's?
Start with these questions
What kind of brewing can you do?
What kind of beer are you feeling?

I can do partial mash but not all grain. And. I'm feeling anything other than a porter or stout but nothing too extreme. Pale ales, helles, anything drinkable is what I'm going for.

Mash @ 152 for 60 - 90mins until conversion
3lb MO
6oz 10L Munich
8oz flaked rice

Add to it
1b light DME
3.3lb extra light LME

Hop it with
Nugget @ 60min to 20IBU
US Goldings @ 20min to 10IBU
.5oz Saaz @ 5 min
1oz Argentine Cascade @ KO

60min boil

Cool, pitch S-04, ferment 2 weeks to 4 weeks, bottle (or keg) and enjoy.

Edit: This is a Pale Ale of sorts... Drop the 10L and call it a Cream Ale.

Brown Ale of sorts

6 oz Munich malt 10L
3 oz chocolate malt 350L

Nottingham and s-04 yeast
