I just did an inventory of my leftovers and will post them below. I'm an 'juicy' IPA drinker and my wife likes 'simple yellow beer'....that being said I also enjoy dark saisons and dark malty stouts. I know I will need to order some ingrediants to go with a recipe, but I do want to use these as much as I can. I also have a bag of 2 row for the base. thanks!
~8# Munich
~3# 10oz CaraRed
~1# 8oz Gam. Honey Malt
~1# Caramel
~1# 4oz Flaked Rye
~1# 10oz CaraAroma
~12.2oz CaraMunich II
~1# Cara 120L
~2# 6oz German CARAFA Type 1 Roasted (very dark)
~11oz English Extra Dark crystal
~1# 4oz Bel. Aromatic
~13.6oz Biscuit malt
~7.3oz Carapils
~7.6oz Pale Rye
~1# each Candy Sugar Dark and Light

That's a lot of leftovers... I'm thinking your best bet might be to craft up a couple of smaller batches of varying things? Unfortunately, I don't have enough insight to offer much more than that. I'll be curious to see what other people suggest though!

I'm up for making as many 5 gallon or 10 gallon batches as it take... :) and I have way more hops than I do grain...but that might be worthy of another thread.
