Looks like you’ll have to develop your own recipe. From the brewery website, it’s 7.9%, 26 IBU and uses a Belgian yeast strain.
I found this on HBT from 2012:
Found a quote from North Coasts Brewer here
"Mark Ruedrich, North Coast Brewing Co.
As the bitterness levels in PranQster, Brother Thelonious and Le Merle are low to moderate, we achieve the dryness we’re after on balance by using a much cooler mash bed. We also employ a couple different sugars to brew these beers."
Mean Brews on you tube analyzed 61 Saison recipes and provides some guidance for developing your own recipe.
So my starting point would be:
75% Pilsner
15% white wheat
5% sugar
5% carapils
Mash at 149F
Saatz and Styrian Goldings mostly late additions
3711 yeast for a clone but I also like WY American Farmhouse blend if they still produce it, but that won’t be a clone.
I’d brew a 2.5 gallon batch and then compare with the original and make some adjustments.
