I've been looking at threads for this question for a while but I can't find one that addresses my specific question, so here goes: if I do a late addition of extract, should I continue my boil timer even if the wort stops boiling as I add the extract? Or should I stop the timer and start it again when the wort returns to a boil? I tried this once before and it took a few minutes to return to a boil.

Thanks

It's fine to keep your timer running. 60 minutes is not an absolute time. You'll be fine, you'll see.

I turn the heat off and pause the timer. After the dme is dissolved I turn the flame back on and resume the countdown once the boil is restored. My understanding has been that the rolling action of the boil coagulates proteins in the wort, and that the alpha acids in the hops need a full boil to isomerize.
