So I am brewing with two other guys and kegging our brews. We have a 10 gallon pot and have been doing 5 gallon batch. Can I just brew two batches at the same time and equally pour them into two different carboys? Instead of 2.5 gallons in the pot do 5? Then split them between two carboys and topping the two carboys off with water to equal 5 gallons?

Absolutely I don't see why you couldn't at all. Sounds like a damn good idea actually. Just try to boil as much of your final volume as you always would.
 
Definitely! You could even add different yeasts or dry hop one to compare and change the flavor. Or just do it all the same way and have a big batch of beer, either way it shouldn't be an issue.
