Kreusen by an Ale ?!

Hi there !

Is it possible to prime an Ale Beer just like what we do by a Lager ?!

I mean by "Kreusening" .

Is there any reason why we use "Speise" only for priming Lager Beers ?!

I don't think that is specific to ales..... I think the vast majority of homebrewers carbonate ALL their beers with either sugar or force carbonation in kegs. I have never carbonated a lager with "speise." I always force carbonate them in the keg.

Why are Ales primed most of the time by using Dextrose or DME and not "Speise" ?!

It's probably historical. Since the German beer law allows only water, malt, hops, and yeast to be used in beer, German beers couldnt be force carbed or use sugar, and DME is a relatively new invention...hence krausening. British breweries had no such restrictions.
