I was uncertain about "precise" sugar:tea ratios as a lot of websites indicate sugar ratios
in "number of cups". Looking at various web pages, the formula seems to be:
1l of water: 70g-100g sugar: 2 teaspoons tea :5%-15% old brew
My usual ratios are 1l of water: 85g-90g white sugar or Demerara cane sugar: 2 teaspoons green tea : 10% old brew
Could someone please comment on whether I am using the right proportions for white
sugar/Demerara cane sugar ?
Should the ratio change depending on jar size eg. 2l or 5l jar ?
Should the ratio be changed depending on sugar type (white/Demerara cane sugar) ?
I have already brewed a couple of batches of Kombucha - it turned out fine but I am not
sure why I don't get much carbonation - I can feel very little fizziness as I drink the Kombucha,
but that's all - is this normal ?
I use tap water for Kombucha. Should I treat the tap water in any special way eg. leave
it overnight in pan/boil it for some time to rid of possible chlorine etc. ?
