I am about at the end of my wine kit and about ready to bottle. When I did the degassing/stabilizing/clear step about 10 days ago, the wine still tasted a little too tart. I just took a gravity reading today, it's at 0.994, quite clear, and tasted pretty good. I did this on Jan 8, so it's been about 28 days.

This is a pino grisio, looks like I will be bottling this in the next few days finally :D
 
We tried our first bottle last night, and it was pretty good. Bottled it on the 7th, and put 1 bottle in the fridge. As far as i'm concerned, this was just as good as any $5 - $20 bottle i've tried.

We will try 1 bottle a week probably and see if it gets even better as it ages.
