Im looking for some suggestions on a Hefeweizen recipe for my third batch. I would like to do a recipe with a speciallty grain addition (if I can get some on the rock known as Newfoundland). Thats assuming a speciallty grain would be done with a hefe.

this is a simple yet effective recipe:

6 lbs Wheat DME (or 7 lbs LME)
1 oz tettnanger (or hallertau or saaz)
WLP300 fermented at less than 70F

i like to steep munich in my hefes. anything from 2 ounces to 0.5 lbs makes for a good beer.

+1 extract hefes are probably the simplest beers to make. They turn out fantastic too!

No need to secondary a Hefe.

Wait till you have a stable hydrometer reading, approx 2 weeks.
