So this was an unorthodox one. I just bottled 5 gallons of what will end up being a sparkling short mead.
10lb clover honey
2 cinnamon sticks
4 vanilla beans
OG 1.078
Primary for 2 weeks
FG 0.998
Secondary with orange peel and 2 vanilla beans for 3 weeks
FG after secondary 0.994 (clearly it wasn't quite done in primary)
Backsweetened and primed with 1/2 lb of manuka honey
Taste at bottling was nice... orange up front with a caramel-cinnamon body
Still too early to tell, but hoping the flavours meld a bit with again and it will be nice and crisp.
