I recently finished brewing a low gravity Wit with the Javaro Lithuanian farmhouse yeast.

It reached terminal gravity after 6 days at 80 degrees.I am now keg conditioning that beer. Since most recipes call for 2 weeks of fermentation with two weeks of conditioning, do you think I could start lagering in 6 days copying the length of time it took for it to ferment? is it reasonable to expect that after only 6 days of fermenting, the yeast is more active than another brew would have been after 2 weeks with a different yeast?
