so, for the past couple weeks there has been a character on Fear the Walking Dead who wants to bring beer back to the post-apocalyptic world.

last episode, he gave up his "famous" recipe

he specified %s for the grain bill

68% pilsner malt
15% wheat malk (& specified Weyermans)
7% flaked oats
10% vienna malt

but he gave the hops in grams, no times given, no ibus

40g Slovenia hops, guessing Bobek
70g Czech Saaz

Belgian AND French Saison yeast

mash at 151-152

pitch at 68 and hold for 10 days, minimum

tweaking in Beersmith gives me the following recipe for a 5-gallon batch
8lb 5oz Pils
1lb 13 oz Wheat
1lb 4 oz Vienna
14 oz flaked oats

2.5 oz Saaz for 60 minutes
1.5 oz Bobek for 60 minutes

OG 1.065 FG 1.012 ABV 6.9%
29 IBU 4.6 SRM

I'm not usually one to ask for critiques of a recipe (It'll make BEER!) but looking for opinions
 
Sure, they're low AA%, but why put all of the hops at 60 minutes? By my rough calculations, you're getting 60-70 IBUs with zero aroma or flavor additions, which doesn't seem like it would make a very tasty saison. I'd probably do an ounce or so of the Saaz at 60 and the rest of the hops near flameout.

Edit: I see you've got it calculated at 29 IBU. I assume that means there's a typo in your recipe for the hop schedule?

he didn't give times for the hops, just amount and type

I see my mistake, was bad equipment profile. now I'm getting 53 ibu
 
I'm not finishing at 1.012. Beersmith tells me the ESTIMATED FG is 1.012

the mash profile is set at 151

maybe ask Dr Smith?

You guys have the batch size wrong. Try Jimbo's hop amounts in a 10 gallon batch. The IBU's make more sense then. Considering most of these people were probably Bud Light type beer drinkers and they haven't have beer in a year or 2 they would probably not like a beer that had 50+ IBU's.
