jeffstuffingsjk I'd honestly love to see a 100% on-site release. I know that's unrealistic but that's my thinking. No bottles to go.

Also did you see my question about gabf? Now that I know that there's four blends, I know the bottle I enjoyed was labeled 3. Is that considered a different beer for y'all or do you consider it the same?
 
This will be your most-anticipated release of all time due to the many updates on SPON you have shared with your followers, the uniqueness of the style, the notice 31 days ahead of time, and the fanbase increasing every week. At the 2 per person Atrial 2016 release, the 1500 bottles on Friday and 2000 bottles on Saturday sold as quickly as the lines could be processed (a couple hours each day), and the 500 bottles for Sunday sold out by 10:30 AM (250th wristband given out). I'm guessing this means at least 1000 people per day will be there wanting to taste and buy bottles of the SPON blend(s).

For the actual release, I believe it makes sense to do one blend a day to increase draft sales of your other great beers - so SPON 1 on Friday, SPON 2 on Saturday, then maybe SPON 3 & 4 the next weekend. Sell ~1500 bottles of either 750 or 375 at 1 per person per day, and keep the rest back for onsite. The suggestions above for onsite policy (increased pricing, limited availability per weekend) are good - just limit it to maybe 100 total onsite bottles per weekend so it would last a while, and you could even stagger what blends and what times they are available.

Congrats on your experiment's success, and I can't wait to try 2016 SPON.
 
First off, I'm sure you guys will make the right decision and I'm sure no matter what people will find something to be angry about. Thank you for all of your hard work!!!

The initial public release of this bottle will be a mad house. As many as you are willing to sell will almost definitely sell out within the first weekend even at 1pp, especially with the notice you provided for the release date. I suggest a lottery like you have done in the past, unless you guys plan on releasing more than 4000 bottles that weekend.

I think a vast majority should only be for onsite. I think allotting a certain amount per day/week/month might be a good idea so you guys can figure the consumption rate and adjust accordingly for the remainder of the year. The other Belgian bar route is to slowly increase the price of your bottle against your supply to ensure bottles last a year. The second option ensures some capital gain which if you felt bad about, you could drop the price of the 2016 blend one once you made it to the 2017 release.

We’re pleased to introduce 2016 Estival Dichotomous. For this year’s Estival Dichotomous, we added grapefruit and tangelo zest to some mature, barrel aged sour beer. We then blended the barrel aged sour beer with citrus zest with young fresh beer fermented in stainless steel. Finally, we refermented the blend of old and young beer with a small amount of marion blackberries.


As followers of Jester King know, we’re fond of the technique of bière de coupage, which historically often involved blending young beer with old, sour beer. We like this technique because of the flavor profile of the blend, and because of the microbial impact the old beer has on the young. For the fruit addition, we used a relatively small ratio of fruit to beer, about half a pound of marion blackberries per gallon.

We'll be announcing release details for SPON -- Methode Gueuze on Monday.
I'm guessing that it will be very fair, with allocations based on distance lived from the brewery, height, favorite color, and high school mascot. Any other method would have entitled people feeling left out or upset.

Back in early 2016, we created four blends of 2016 SPON — Méthode Gueuze. All four blends will be released this weekend at Jester King by the glass and in bottles to go.


Bottles To Go


Between the four blends, we have approximately 4,700 bottles 375ml and 4,800 bottles 750ml for a total of approximately 9,500 bottles. Half of the 375ml and half of the 750ml bottles will be released on Friday the 18th and the other half on Saturday the 19th. The bottle limit is one bottle per customer per day 375ml and one bottle per customer per day 750ml, for a total of two bottles per customer per day (one 375ml and one 750ml).


In summary, bottles to go looks like the following:


Friday, November 18th at 4pm

2,350 bottles available of 375ml, $20, limit 1
2,400 bottles available of 750ml, $36, limit 1


Saturday, November 19th at 12pm

2,350 bottles available of 375ml, $20, limit 1
2,400 bottles available of 750ml, $36, limit 1


Any bottles not sold on Friday will roll into Saturday, and any bottles not sold on Saturday will roll into Sunday, and so on, until all bottles are sold out. Customers will have the choice of whichever blend(s) they’d like for their bottle(s) while supplies last.
