This Wednesday it will be 2 weeks in bottles. Does it make a big difference if I drink one at 2 weeks or wait until 3 weeks?
 
It depends on the beer.. the temp.. the yeast...put one in the cooler for a full day.. pop the top and give it a pour. if it is carbonated then you are halfway there.. taste it, if it tastes good to you then drink away. If it doesn't taste quite right, hold off on opening anymore. I will say however that the three weeks at 70 is a pretty good baseline rule.
 
totally depends on the yeast, the recipe, and your brewing process.

pop one open and decide for yourself. if it has a fruity, apple cider taste, then there is still bottling sugar that has not been fermented yet, and you need to wait another one or two weeks, at least.
 
...an be sure that you pick the bottle with the most yeast sediment at the bottom, because it probably has the most carbonation.
 
The tow weeks of carbonation is just a bear minimum, imho.
I never had a batch that was really ready by carbing it for only
two weeks.
Drinkable? Yes.
Great? Probably not.
Why don't you just pop one and try it? :rockin:
