Going to brew an Irish Red Ale tonight and I wanted to throw this recipe out for starters and then see if there are any suggestions or modifications.

Grain Bill
8# Maris Otter
.75# Flaked Barley
0.5# Crystal (80L)
0.25# Chocolate
1oz Golding (Bittering)
1oz Golding (Finish)

Been getting 80% efficiency so I anticipate an OG around 1.056.
I actually doubled the chocolate because I want an SRM around 13 but I really want the malty smooth taste. Does this much chocolate overpower? I haven't used more than an ounce before.

Might be too much chocolate, hard to say. Have you considered using a darker crystal to up the SRM?

Also, what's the AA on the Goldings you are using? I have found Goldings rather inefficient as a bittering hop, you might want to try Target or up the amount of the initial Goldings addition.

I used fuggles at 60 min for my Irish Red...

My grav was 1.063 so i was just a tad over the guidelines and my SRM was 17.9 (also right on the edge)... I used .6 lbs of Crystal 120L and .26 of Roasted Barley to acheive the color i wanted... As for body and other malts i used Flaked Barley and Flaked Oats (both 1 lb bags), and Carapils (.6) and Maris Otter as a base (10.54)...

I used Fuggles at 60
EKG and Fuggles again at 5

I have it fermenting right now at around 62*F to keep the right yeast profile, and we'll see... Your recipe seems pretty good... Though i would use darker crystals and just a little bit of roast, no chocolate though.

Here is the recipe for my irish red. It was very tasty. The base malt was Maris Otter.
