Edit : new recipe at post #9

Hi,
I'm trying to formulate my first recipe ever. I'm looking to do a hop-forward IPA with lots of fruitiness using Nelson Sauvin, Galaxy and Mosaic alongside the Conan yeast. I think those hops fits really well together (after reading online), but I'm not too sure about the malt bill and the hops additions' timing.

Batch Size : 3.5 gallons
OG: 1.070
IBUs: 79.3 IBUs
Mash: @ 149F

8 lbs Pale Malt (2 Row) US (2.0 SRM) 83.1 %
8.0 oz Munich Malt (9.0 SRM) 5.2 %
8.0 oz Wheat Malt, Ger (2.0 SRM) 5.2 %
6.0 oz Caramel/Crystal Malt - 40L (40.0 SRM) 3.9 %
4.0 oz Carafoam (2.0 SRM) 2.6 %

0.400 oz Galaxy [14.00 %] - Boil 30.0 min 18.4 IBUs
0.400 oz Mosaic [5.00 %] - Boil 30.0 min 6.6 IBUs
0.400 oz Nelson Sauvin [12.00 %] - Boil 30.0 min 15.8 IBUs
0.500 oz Galaxy [14.00 %] - Boil 15.0 min 12.0 IBUs
0.500 oz Mosaic [5.00 %] - Boil 15.0 min 4.3 IBUs
0.500 oz Nelson Sauvin [12.00 %] - Boil 15.0 min 10.3 IBUs
0.350 oz Galaxy [14.00 %] - Steep/Whirlpool 10.0 min 4.3 IBUs
0.350 oz Mosaic [12.00 %] - Steep/Whirlpool 10.0 min 3.7 IBUs
0.350 oz Nelson Sauvin [12.00 %] - Steep/Whirlpool 10.0 min 3.7 IBUs

0.750 oz Galaxy [14.00 %] - Dry Hop 5.0 Days 0.0 IBUs
0.750 oz Mosaic [12.00 %] - Dry Hop 5.0 Days 0.0 IBUs
0.750 oz Nelson Sauvin [12.00 %] - Dry Hop 5.0 Days 0.0 IBUs

1.0 pkg Vermont Ale (The Yeast bay #) -

What do you think? Will it be good?

The only tips I can give you are:

- I'd use a tad less Nelson Sauvin. It's a great hop but tend to take over a bit (maybe drop some of the 1/2oz additions to 1/4oz and up the Mosaic).
- Not sure if you need the Carafoam as the malted wheat should give enough of a head.
- I'd consider dropping the Crystal malt as you have enough gravity to get some sweetness in there, but I know you guys like your beer thick and sweet like milkshake :D

Looks great for a first recipe, though!

I'd drop both the carafoam and the munich. I like fruity hops with lighter malts. Love the wheat though! I think splitting the hops evenly like that is fine, but the whirlpool just needs more hops! Atleast double it, IMO!

:D You made me laugh there with that milshake comment. However, I'm not looking for a sweet IPA, but a relatively dry IPA with just enough residual sweetness to not have a bitter bomb. I want the hops to really shine and the malt bill should really just be supportive.

I left the caramel malt there because most winning NHC IPA recipes had some degrees of Caramel malt and some Munich Malt. I also try to consider color. As I'm only using 4 oz of caramel malt, I didn't think it would have such an impact.

Fruity hops with lighter malts seems like a logical statement, thinking about it. I didn't really like my amber with lots of citra and lots of caramel malts.

However, is 8 oz of Munich malt that noticeable? I initially formulated my recipe that way because a lot of NHC IPA winning recipes had munich malt to some degree, and it really seems to improve color. However, thinking about it, considering the conan yeast is not as attenuative as wlp001, I probably don't need that additional sweetness. Maybe I should keep it simpler like you suggest.

It'll be noticable, but it certainly won't be an amber! You could keep it or not, you'll be fine either way. Residual sweetness doesn't have to be a bad thing, it can emphasize the fruityness of the hops. Good luck, the Nelson and Mosaic combo is great!

What about this new recipe formulation?
