No, not the infusion-mash method...
I've been infusing some wines on the side and i've really liked the results.
I got hooked after I first tried this recipe: Orange Wine - Saveur.com
Now i've made a few including white white with lemon and thyme; rose with orange and sage; red wine with cinnamon and ginger;
I was thinking of trying the same with a Wassail recipe. Along these lines:
6 bottles of brown ale (probably Newcastle or homebrew)
3/4 cup packed brown sugar
4 cinnamon sticks
4 whole cloves
1/2 teaspoon nutmeg
1/2 teaspoon ginger
3/4 cup sweet cream sherry
1 cup cider
Ground cinnamon
Anybody rebottle packaged beer?
Any problems/recommendation concerning the carbonation level?
Better to try with homebrew instead?
I debated doing this with eggnog, but i dont think I want to bottle something made with eggs...
