Bought the oatmeal stout kit from Midwest supplies. Decided I would try and transform it into an imperial.

The kit came with specialty grains that consisted of 8 oz of flaked oats, 4 oz of chocolate malt, and 4 oz roasted barley. 1 oz of U.S. fuggles and 6 lb of dark extract. It came with Wyeast Irish Ale 1084 yeast.

Things I added, to the steeping grains I added 9 oz of oats, 1 lb of British chocolate malt. Another oz of fuggles, and another 6 lb and a 3.15 lb of dark extract.

Steeped grains for a good 40 minutes at 155-160. Got to a boil and dropped the heat, added the 3.15 lb extract and brought back to boil. Threw in 1 oz of fuggles. 45 minutes added the other 12 pound of extract and the oz of fuggles. Boiled to 60 minutes and then crashed it with the wort chiller.

As far as yeast goes I did a yeast starter and also purchased a additional whack pack of the 1084 yeast. Pitched both the starter and the other package of yeast.

Had a OG of 1.120.

Please add any comments, this is only my third brew so I'm diving in the deep end first.

I suspect you will probably end somewhere around 1.040, and have a very sweet tasting beer.
