so Ive been thinking.... I know its not advised. However, I want to make an IIPA 7-10% abvish?

7.5gal boil down to 5.5
10lb Pilsner
5lbs Pale 2row
1lb Cara pils
8oz Crystal 60

90min 2oz Summit
90min 1oz Sterling
45min 1oz Summit
45min 1oz Sterling
15min 1oz sterling
dryhop secondary 14 days 1/2oz Summit and 1/2oz Sterling
Wyeast 1272

I dunno- any suggestions? am I on the right track? And no I dont have access to Beersmith for another 60+ days

I happen to be getting 1lb Summit, Sterling, NZ Halluer.

Freshops I take it?

If I'm not mistaken, Sterling's a bit like Saaz... definitely different for an IIPA. I'd be interested to see how that works.

Okay dude...I'd make a few adjustments...
Here's what BeerSmith says:

Batch Size: 5.50 gal
Boil Size: 6.62 gal
Estimated OG: 1.075 SG
Estimated Color: 7.9 SRM
Estimated IBU: 174.5 IBU
Brewhouse Efficiency: 68.0 %
Boil Time: 90 Minutes

Ingredients:
------------
Amount Item Type % or IBU
10.00 lb Pilsner (2 Row) Ger (2.0 SRM) Grain 60.6 %
5.00 lb Pale Malt (2 Row) US (2.0 SRM) Grain 30.3 %
1.00 lb Cara-Pils/Dextrine (2.0 SRM) Grain 6.1 %
0.50 lb Caramel/Crystal Malt - 60L (60.0 SRM) Grain 3.0 %
2.00 oz Summit [16.50%] (90 min) Hops 89.2 IBU
1.00 oz Summit [16.50%] (45 min) Hops 38.3 IBU
1.00 oz Sterling [7.50%] (90 min) Hops 20.3 IBU
1.00 oz Sterling [7.50%] (45 min) Hops 17.4 IBU
1.00 oz Sterling [7.50%] (15 min) Hops 9.4 IBU

175 IBU's is pretty damn high.

If you want me to tweak some times and stuff, I can make some recommendations to get this down to a drinkable level.

I have those exact hops from Freshops so I know the AAU's on those puppies.

Normally I'd agree. But I like my IIPA's to be completely over the top. What about dry hopping? An IIPA is just begging to be insanely dry hopped.

That's what I was thinking...

1 Ounce each of Summit and Sterling as FWH (90 minute boil)

1 Ounce Sterling at 15 minutes

1 Ounce Sterling at 5 minutes
1 Ounce Summit at 5 minutes

This gets your IBU's to around 90 (the style calls for 60.0-110.0).

Then dry hop with 2 ounces of Summit for 7 days.

I did an IIPA at the end of December. I had two oz of bittering hops, then just 3 more oz from 15 min to flame out and then 2 oz to dry hop.

It's not over the top, but it did just take a first place in a competition. The recipe is on another computer of mine, so I don't have access to it just yet.

Another thing that I will always recommend for and IIPA now is sugar. Add a lb of dextrose because you want it to ferment out on the dry side of things.

I wonder-
2oz Summit 1oz Sterling 90min
1oz Summit/sterling 45min
1oz Summit/sterling 10min

Dry hop 2oz Summit for 14 (primary or secondary?

Think this will balance the Malt/Hops a bit closer?

That still gets you to 144 IBU's.

I think (especially with Summit) a 45 minute boil is as bittering as a 60 minute boil.

I'm an advocate of First Wort Hopping to get balanced bittering, and then restricting all other hops additions to 15 minutes or less to extrude flavor and aroma and not blow the needle off the bittering charts.

Again, the IIPA style calls for IBU's of between 60 and 110.

Here's what your new schedule looks like on the ratio chart... :D

some reason Im thinking id have to have an OG of 1.2 to get a balance....

I might just go for the 175 as I love Stones Ruination

I agree with the above suggestions. I'd stick to bittering at 60+ min and then bump some of the hops to flavoring times at 15 min or less. It will bring your bitterness down into a more reasonable range and give you some tasty hop flavors.

Agree wholeheartedly. Relatedly, drop the carapils - that does nothing but make the beer "thicker," which you don't want in an IPA (especially when you've got as much malt to start with as this). You can sub in some wheat malt (half pound or so) to make up for the head retention.
