I'm making plum wine and have already put the juice, sugar, water, yeast, and yeast energizer into the primary. Everything was clean but I'm sometimes careless about putting things down and then using them without cleaning them again.
... And after the yeast was in, I realized I forgot the campden tablets.

Leave it, or put it in immediately?

Nah, it will likely kill most of the yeast causing too great of a lag time allowing bacteria to take hold. Right now you'll be competing with the wild yeasts on the fruit more than bacteria.

Yeah there's a growing consensus not to even worry about adding it. I still do.

Maybe add when you rack to secondary. I have had bad luck making plum wine with no sulfites. Ended up with a gnarly pellicle and tasting like vomit! Had to dump the whole batch.
