After aging for about 8 months, I put this batch in my uKeg to force carbonate. I tasted it after three days, and I was not happy. It had a mild vinegar taste that I didn't like. I figured I'd have to toss it, but I got distracted and left it in the uKeg for about three weeks. When I tried it again, it was wonderful! It's the second best cider I've ever had, hands down. I don't know what three weeks in the uKeg did to it, but it's gooooood!

It's been a few years since I brewed a unicorn, so I'm very happy :)
