If you're planning to measure samples above room temperature (e.g. 78F), you might as well buy a replacement probe while you're at it. Heat kills probes like Michael Vick kills dogs...

Also, realize pH changes with temperature. So, your room temperature sample may read 5.6 but the mash pH is actually ~5.3 at 152F.

I'm going to cool the sample down before i use my pH meter. and I'm going to do some search about pH changes with temperature. That was really helpful post. Thank you so much.
