Ok so I totally botched a batch. Fortunately it was only one gallon. It was a Three Floyds Rabbid Rabbit Clone which is a Saison and one of my faves.

Anyway... I think I had old yeast, it was oxidized, yield was off... etc etc...
It basically tastes like a watered down, fizzy apple cider at this point. Was going to dump all the bottles but the guys in my home brew club suggested pouring a few into a growler with some fruit extract and let it stew for a few days.

Anyone ever do this? Or any other sugggestions? I am open to anything and really just want to play around with it at this point.

How long has it been since you reached final gravity? It may need more time to condition. How long was your rolling boil? What kind of yeast was it?

Also, did you measure SG before pitching the yeast? Curious what it was.

I'm sure that wasn't it. I moved it to a secondary conditioner and got a lot of oxygen in there. If anything it was fermented too long, if that is such a thing.
