How much better does it taste with age?

I've been kegging my beers and after force carb. I hit the tap. My kegs last around 7-10 days till dry. My question is if I could hold back on wanting to drink my brew will it get better with time? I'm only brewing IPAs & wheat beers at this time. I think they taste just fine as is.
 
Your fine, now try making a Belgian Tripel and drink it that soon and you'll know why people typically age them...some beers just end up with really harsh flavors that mellow out over time, especially high ABV ones that dont have pounds of hops to hide behind. They can get boozy and taste of alcohol until they age a while.
