I am wanting to have an English Barleywine and RIS brewed up for next Christmas season. I don't have a recipe worked out yet but I am shooting for something in the 10% range, my first attempt at double digit ABV. I will be oak aging each beer as well. So if I brew them in Jan or Feb will they be ready to drink come next December? They will be two and half gallon batches if that makes a difference.
