Last week I bought 6 gallons of fresh, UV pasteurized cider. I put 5 in a carboy and it is fermenting well. Plan is 2 weeks in primary, two weeks in secondary, then back sweeten with the 6th gallon, and stove-top pasteurize after a couple days of carbonation.
My question is, will that 6th gallon still be good to use after 4 weeks? It is in a cold mudroom, temp averages 5 celsius. Uv pasteurized, no preservatives, unopened in plastic gallon jug.
