How hot will that big beer get?

I rarely brew an ale above 1.055 for the simple reason that I enjoy the smaller beers. When I do brew them, my fermentation temperature gets all out of hand. I then move the vessel to someplace cooler and drop a couple of frozen bottles next to it.

I'd prefer not to do all this and I'm wondering if it's possible. If I leave a 1.075 ale using US-05 at 65F ambient, how high do you suppose it will rise?

Roughly 5° more IIRC. 65°F ambient sounds fine for that. Make sure you pitch enough yeast.

I just fermented a 1.100 beer in 70* and it rose to 72* at the peak. I am doing a 1.075 IPA right now in 60* ambiant and it is sitting at 65*

I tend to pitch big beers at the low end of the temperature range. That makes for a slower start and less of a temperature increase.

This is a 1075 Dubbel at 36 hours in...ambient in the room is 62-63. Pitched at 64. Climbed slowly and is holding steady at 66 degrees.
