How does extract work?

I am wondering, I thought all beer had to be mashed with grain to be beer. How does malt extract replicate this process in any way. What exactly is it?
 
Extract producers mash/sparge/lauter grain and concentrate the resulting wort into LME. DME is the same wort that is spray-dried into powder form.
 
+2 The work is already done for you. I believe that in BYO there was something about making your own extract or something :confused:
 
The only thing I have to add is that some LME is 'pre-hopped' with hop extract oil. This sort of extract should not be boiled for very long..15 minutes tops...just to sanitize it. Otherwise you can start boiling off the hop flavor and aroma.

when I did extract kits I stuck to ones with un-hopped extract, where you added hop pellets during the 60 minute boil.
