I’m getting ready to keg my hefeweizen, and I’ve seen it stated that for a hefeweizen, the volume of CO2 should be in the range of 3.0-4.5. I wasn’t really sure what number to go with, but I was planning on going with 3.0 volumes of CO2. If I go with 3.0 volumes of CO2 at 42F, the recommended pressure is 18.9psi. I’ve always done the set it and forget it method, and all my keg lines are 10’ long. I would imagine if I carbonate at this high of a psi when I dispense the beer I’m going to have foam galore. So my question is how do you guys keg a high carbonated beer? Do you do the set it and forget it method? After two weeks do you bleed the keg and set the regulator to a lower serving pressure? Any help would be appreciated.

Turn down the pressure when you dispense. The 19psi is just to get it carbonated. Don't over think it, it's just beer ;)
 
Give it a try and if you get foam increase your line length or decrease diameter if you still can. Turning down the pressure and venting every time you want to pour a pint defeats one of the purposes of kegging.
