Maybe it's silly but I think it classes things up vs. a gallon water jug on the floor. It stays with the fermenter if you ever have to wheel it around.

Elegant and practical..My favourite kind of attention to detail! I love it..The only addition I'd make; assuming that's a 1/2" hose is to shove a piece of either 1/2" or 5/8" SS tubing in the end of the hose to sit in the sanitizer and make the hose last longer.

Yeah, if I had my way the spike blowoff canes would be long enough to reach without any tubing but I have enough scraps to make that work anyway.
 
Have you also considered a mounting method that would work with the SS Brewtech conical? They have different legs than other brands.

That's cool and all but I like using a Goat Island Growler placed on the bottom shelf of my fermenter. I think it looks cool and you can see the bubbles. Brewery guest get a kick out of seeing the Co2 bubbling away.
 
Is it overkill? Sure. But does I look damn good while doing the exact job you need it for? Hell yeah. I'm a fan
