I'm brewing an IPA this weekend and I was originally going to use Columbus hops for buttering and Centennial towards the end of the boil and then dry hop with more Columbus. It was going to look like this:

12 lbs 2 Row
1 lb. Caramel 60L
1 lb. Munich 10L

1 oz. Columbus 60 min
1 oz. Centennial 20 min.
1 oz. Centennial 5 min.

1 oz. Columbus Dry Hop 1 week.

My LHBS was out of Centennial so I grabbed some Amarillo instead. Think this will work out ok? Should I just ditch the Amarillo and go all Columbus?

If you like citrus IPAs, it should work out better with Amarillo.

Note: I prefer real butter myself.

Amarillo will work just fine. I'd move that 20 minute addition closer to the end though. I'd also add a 1 minute or flameout addition.

I would...

1 oz Columbus 60 min
.5 oz Columbus 25 min
1 oz Amarillo 0 min

.5 oz Columbus DH
1 oz Amarillo DH
