I brewed a German Hefeweizen that has now finished the 3rd week of bottle conditioning. The hefe has a typical banana smell but not over-powering by any means. Its got some decent hefe-like flavors, but ends with a little hoppy bitterness. The hops I used had an AA of 4.5% which I think might have sent the IBUs up a bit to high. It's definately a drinkable beer, just not the flavor profile I was aiming for.

Can anyone think of other reasons my hefe might have a bitter finish?
 
All depends on your taste.I make a near hoeggarden clone with 1OZ. centenial for bittering.It's delicious.
