Hoppy Hefeweizen

I brewed a German Hefeweizen that has now finished the 3rd week of bottle conditioning. The hefe has a typical banana smell but not over-powering by any means. Its got some decent hefe-like flavors, but ends with a little hoppy bitterness. The hops I used had an AA of 4.5% which I think might have sent the IBUs up a bit to high. It's definately a drinkable beer, just not the flavor profile I was aiming for.

Can anyone think of other reasons my hefe might have a bitter finish?

I use only 3% AA in my HWs with only 6 lbs of DME.

Sounds like you overhopped.

Make another one and under hop...then blend them. They should balance out each other.

All depends on your taste.I make a near hoeggarden clone with 1OZ. centenial for bittering.It's delicious.

I suppose it does all depend on taste. I used 1oz of Liberty hops for a half batch with 3lbs DME.

You used twice as many hops as you should have. I can imagine it is pretty bitter for a hefe.
