Apparently there was plenty of yeast left. I opened a bottle last night after 11 days and it had very nice, but still low for the style, carbonation. A couple more weeks and it's ready to go.

But the all important question remains unanswered... how's it taste, dude?!



I think it's high time I make something that you'd enjoy.

I think it tastes pretty damn good. Much drier than last year's version. It's certainly too bitter for some. The nose is quite a bit stronger than the still sample I had before bottling.

I haven't had an IPA in a months' time. I dunno why, but as soon as the holidays were over, I was done with hoppy, and wanted nothing but High Life & PBR. Darned redneck genes.
