What is the best hop pairing for an IPA?

  • Simcoe+Citra

  • Citra+Amarillo

  • Amarillo+Simcoe

That is kind of like asking what is the best car: Lamborghini, Ferrari or Porsche. You can't go wrong with any of them. I wouldn't waste any of those hops for bittering. Get a cheaper neutral high alpha bitter hop like warrior or magnum.

However, with the choices above, I chose the Amarillo/Simcoe. Love it.
 
Simcoe & amarillo is a very common combo because it just works so well. Simcoe & citra works really well too. For me I don't really like amarillo & citra. I think they are too similar and just come across as one dimensional when used together.

A couple other combos that work really well are: amarillo & chinook, and citra & chinook.
