Hop addition recommendations

So a buddy of mine ordered some extract kits from. I read the reviews and some people say the beer is a bit bland. Obviously this depends on preference of course, but I'm sure these kits are conservative to appeal to the masses, but I was thinking about getting some extra hops to get a little more hop flavor into the beer. Maybe some extra hops at 15 min or flameout.

The first is a autumn amber ale that comes with:
-liquid malt extract
-2 oz special b
-8 oz crystal 80L
-2 oz roasted barley
-1 oz hallertau 60 min addition
-1 oz fuggle at 2 min

The next is an Irish red:
-liquid malt extract
-12 oz caramel 40L
-2 oz special b
-2 oz roasted barley
-1 oz cascade 60 min
-1 oz fuggle at 2 min

These are 5 gallon batches. If anyone knows any hop additions that might compliment these the help would be greatly appreciated.
 
The ones used for bittering additions are really flavor/aroma hops due to there loweer AA%. I'd say to use .5oz of each hop used in the beer @ 15-20 minutes left in the boil for more flavor.
 
How about an extra ounce of hallertau at 15 for the amber and an extra ounce of cascade at 15 for the red?
