Would you say the quality is better in one or the other? I want to make extracts to use in my mead, but I want to know if it would be worth it or not

as far as quality, this is like home malting.
Some home maltsters get a good product consistently
Some home maltsters get a good product inconsistently
most home maltsters don't get a good product consistently and give up before they get it down.

The question is also why. All the equipment to get the sugar to make extract with, puts you into all-grain.

LME requires something similar to a sugaring house syrup evaporator table and DME requires a spray kiln. Thats some serious equipment for someone not setting up to sell the extract.

homemade tinctures/extracts can be very high quality.
also a lot easier to make than malt extract for beer brewing :)
