I just brewed a clone of Samuel Smiths Winter Welcome..extract with 8lbs of light DME based off a recipe in a clone book I have. OG was supposed to be 1.068 - 1.07. Mine came out @ 1.072. I noticed in the book that other recipes that have this high of an OG...it says bottle & age for 6 months. This recipe doesn't say that...which is why i brewed it...it should be ready for Christmas. Is this schedule good enough for a beer with an OG of 1.072.... 2 weeks primary...2 weeks secondary...3 weeks bottle?
 
You'll be the judge. I'll bet you find some "hot"ness (alcohol bite) to it at 3 weeks in bottle that will condition out with time. This doesn't mean it won't be tasty.
