here's my dubbel recipe

4. Belgian Dubbel

7lb Light Liquid Malt Extract
1lb Amber candi sugar
1lb CaraMunich
1lb Belgian Pils
½ lb Biscuit Malt
½ lb CaraPils
½ lb Special B

1.25 oz tettnanger 60 min
.5 oz hallertauer 15 min
.5 oz hallertauer 5 min
2 oz grated ginger 15 min
1 tbls star anise 15 min
½ tsp irish moss 15 min

white labs wlp575 belgian style ale yeast blend


Now I understand this isnt really following the dubbel style exactly, but I put some stuff in that I think will taste good. I am not married to the ginger or the anise, but neither really seem out of place. Anyway, I would appreciate some input/suggestions. I will be cooking up the starter tomorrow morning (friday), so it will be a couple of days before I get this in the fermenter.
