Help with wiring very simple controller

I am slowly tip-toeing into electric BIAB brewing. In this first phase, I will heat the strike water, and maintain the temp throughout the mash, with my sous vide device. The 240V 5500W heating element I am installing in my kettle will only be used during the boil. As such, to avoid boil-overs, I want to be able to adjust the power through the element. The plan is to purchase the StillDragon DIY controller, and add an L6-30 inlet, an L6-30 outlet, a switch, an LED light to indicate power is on, and a case fan to keep the controller from overheating. Would anyone be so kind as to draw up a wiring diagram for such a setup? Also, do I need any fuses included anywhere? I have enough skills to wire this up, but not enough knowledge to keep me from hurting myself.
