I am making 4 gallons of Creme Stout...after a week, the fermantation has completly stopped, but it is still very sweet. Potential Alcohol content was 8% and the current Hydrometer reading shows 5%. That is only 3% and I was expecting 6%.

Any suggestions how to kick of another round of fermantation.....
I want less sweet and more alcohol...
