I want to make a fruity, soft NEIPA - i have 100g each of vic secret, wai-iti and riwaka. I also have some magnum and columbus if needed as well as 50g of cryo pop blend cryo hops but.... I'm thinking the 300g of vic, wai and riwaka should be sufficient? I've never brewed with any of these before, so looking for some advice of combinations... my own thoughts are tiny magnum addition at 60mins then split the hops 50-50 between a 30min hop steep at 70 degrees and a 5 day dry hop. But I've just read now that wai-iti is quite subtle so would 75g of riwaka and 75g of vic secret in the steep, with 100g wai-iti and the final 25g of each of the riwaka and vic secret be a better blend?
As for malt bill, 90%pale with 10% Munich? I do have melanodin and other various crystal malts but thinking to steer well clear of these? Except maybe the melandoin?
