I am looking to approximate a locally made brew. I have the basic ingredient list but would like to do a partial mash version. Any ideas? I can make some reasonable guesses on temps and times.

Here is the list:
Made with 80% Vienna malt and 20% Maris Otter. Bittered with Chinook hops and finished with Mt Hood hops. Dry hopped with Cascades.

Unless you can find a source of Vienna extract (which will be difficult), there isn't any way to make this a PM. Vienna will, however, convert itself. So, your best shot would be to mash as much Vienna as you can and make up the gravity with the palest extract you can find.
