I brewed an Irish Red last Saturday. I kept the wort in a water bath. I did struggle to keep it in the mid to high 60's (it has been over 100 degrees 7 days in a row) I used 2 pkg Notty yeast. I needed a blow-off for 2 days. Normally i don't even look at my beer for 2 weeks. gravity reading today is 1.011. OG 1.064. Sample tastes horrible. No carmel flavors. Anything to be done or is this typical for 5 days.
 
Notty gets pretty foul if it goes over 70-72 degrees. Since you didn't get over mid 60s, maybe it's just young beer. Otherwise, fusels and things would form and not give a good beer.

So if it got "hot" it is basically ruined? That is what I get for brewing in a heat wave. Not much else to do.
 
I guess I will let it go. If my FG sample is still awful should I just let it go? I have never dumped a batch. I bottle so if it is going to taste bad, i should just dump it?
 
Nope. Never dump. Bottle it and just let it set for for a few months. The only undrinkable beer is the one you pour down the drain.
